Vanessa made some rice cake (bibingka) yesterday, it was delicious, my work colleagues enjoyed it too. :xxgrinning--00xx3:

wow!!!! ricecakessssss i love ricecakes ohhh i remember my grand always makes it for me and my cousins back home.

Ingredients:
6 whole eggs
1-1/2 cup granulated sugar
2 (400ml) cans coconut milk
1 16oz pkg. glutinous rice flour
2 tsp. vanilla extract
1 stick melted butter


Cooking Instructions:

Beat eggs. Add sugar to eggs gradually. Combine all the dry ingredients together. Combine all the liquid ingredients together. Pour dry and liquid ingredients alternately in thirds. Line baking pans with banana leaves or grease paper. Bake in center of preheated oven for 40-45 minutes or until firm in the center.

We bought the rice flour in a small Filipino store in the East End of Newcastle, we think Chinese shops/stores will also sell it.

Hiya Van & John!!!

I cooked your recipe of Bibingka!!!! It was really really sweet, yummy & sticky hehe... At first I wasn't sure how it will look like or what the result shall be because I haven't tried using Glutinous rice flour in baking yet. Also you did not specify the temperature of the oven. Anyway, I put it on 180-200C and they turned out to be just perfect. I was able to make 2 pans of bibingka!!!! Best serve when COLD!

I've been very busy these couple of days entertaining guests. Anyway they & my husband were very happy, even though it was a bit unusual to their taste but they loved it!!! :xxgrinning--00xx3::xxgrinning--00xx3:
