Kinilaw means to “cook” in vinegar. It’s not really cooking since there is no heat involved. But soaking fish or some other seafood in a strong vinegar solution turns the meat opaque and gives it a texture of having been cooked. Why do Filipinos love curing fish and meat? Specifically, with the use of vinegar? Hence, they are used in many of our traditional dishes like adobo, tapa and kinilaw.


There are a variety of fish that can be used for making kinilaw. Tuna, tangigue or tanigue (http://www.camperspoint.com/article.php3?id-article=110) (sea bass), talakitok (cavalla) and lapu-lapu (grouper) are only some of them. I used yellow fin tuna for my kinilaw.




Ingredients: (for 6 people)


1 kilo fish
1/2 cup vinegar
1 medium onion (it depends how many you want)

1 medium ginger
5 pieces lemon
Salt

cucumber or radish


Method:




First, you have to clean and cut fish and put it into a bowl.

Pour the vinegar into the bowl.

Cut the lemon in half and squeeze it.

Put the sliced onion, ginger, cucumber or radish and salt to taste in the bowl.
Leave it out for one hour in the refrigerator before you eat it. Or you can eat it if you want hehehe :xxgrinning--00xx3::xxgrinning--00xx3::xxgrinning--00xx3:

WE BOUGHT SEABASS IN ASDA for £3 the other night and when I tasted it, I said... Hmmm it tastes familiar.... Not knowing it's TANGUIGUE!!!! (Poor me, I did not go fish shopping when I was in the PI... so I did not know what's the name!)

Also, another recipe:
Preheat oven 180C
Slice the Seabass (accdg to your preference or leave it whole)
Seasoned with Salt, Pepper and you can add chilli on top to add an extra kick
Foil wrapped the fish
Add knob of butter on top and parsely (usually free when you buy in Asda)

Bake for 8-10mins...

Serve with steamed rice or fat chips or veggies!

TRY THIS!!!! AMAZINGLY TASTY!!!!

I am also surprised to know that Sea bass is tanigue..:Erm::Erm:

i thought tanigue is a part of a mackerel family, the so called Wahoo..

he he i want some wahoo fish please:D

Im surprised how many fish we seen on programes fished in cold waters around europe and in shops in the Uk the Wife knows.
